Belgium cuisine goes far beyond waffles, chocolate, and beer. Though that delicious trio is treasured, locals also covet lesser-known Belgium dishes like cuberdon cones, stoemp mashed potatoes filled with sausage and vegetables, and the stewy Carbonnade Flamande that’s slow-cooked in beer.

Gentse waterzooi is a Flemish fish stew that evolved into a creamy chicken soup. Waterzooi means “boiling water”, and such a basic definition reflects the simplicity of this homey dish.

You’ll find frites throughout Belgium food stalls, but don’t be shy to order these fries in a sit down restaurant. Moules-frites, the national dish, is a mussels and fries combo.

Those who don’t have a sweet tooth for chocolate can enjoy decadent Belgium cuisine in other forms, like pom koek. This traditional spiced coffee cake is a coffeehouse staple.
